Flourless Chocolate Cake


  • 10 oz. semi-sweet chocolate
  • 10 oz. unsalted butter
  • 10 large egg yolks
  • 8 large egg whites
  • 6 oz. granulated sugar


  1. Melt chocolate and butter over a bain marie
  2. Whip yolks and 3 oz. (Important: this is not all the sugar) sugar to ribbon stage
  3. Fold in melted chocolate and butter
  4. Whip whites and remaining (3 oz.) sugar to medium peak and fold into chocolate mixture
  5. Spread evenly into half sheet pan
  6. Bake at 325°F – 350°F in a convection oven until set in the center and dry to the touch

    The best chocolate cake recipe ever!!! I did try it for the first time and it came out perfect. I served it for tea time on Sunday and everybody really enjoyed it. Thank you, looking forward to more great recipes.
