Lentil Soup


  • 1 cup of lentils
  • 2 tablespoons olive oil
  • 4 - 5 cups of water
  • 1 chopped onion
  • 1 or 2 diced tomatoes
  • 1 cup of vegetable, meat or chicken stock
  • 3 or 4 cloves of garlic
  • 1/2 cup of tomato sauce
  • 1 teaspoon of mustard
  • 1 teaspoon of ketchup
  • 2 tablespoons of vinegar
  • 2 table spoons of fresh or dried parsley
  • salt and peper


  1. Place the olive oil into a large pot and set over medium heat.
  2. Once hot, add the onion, garlic, parsley, salt, pepper and sweat until the onions are translucent, approximately 6 to 7 minutes.
  3. Now add the tomatoes and tomato sauce. Increase the heat to high and bring just to a boil.
  4. Add the mustard and ketchup together with your choice of stock (vegetable, meat or chicken). Now stir, add the water and bring to a boil.
  5. Reduce the heat to low, add the vinegar, salt and pepper to taste then cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes.
  6. When the lentils are ready remove one cup of soup and puree it with a blender. Once pureed, put it back with the rest of the soup and stir.
